At the current time, Saria and the other Sages are available, but I'm not necessarily sure if, in Awakening Hyrule, they will be the era's current Sages. For instance, in the Forest Temple, I've come up with a completely different Sage than Saria, so if you'd like to play as her, you're more than welcome, but remember this. She is an ancient young lady, lived since the Ocarina era. She's got the blood of Sages, and knows what's going on. What were your plans with her?

For those of you who do not yet know, Awakening Hyrule takes place after the events of: Ocarina of Time, Majora's Mask, Twilight Princess and Four Swords Adventures, respectively, but follows the timeline after Child-Era Link had been sent back by Princess Zelda's magic.
A Link to the Past was the route traveled in the timeline events should, in Ocarina of Time, Link had been defeated.
We are coming to an age where the return of Ganon is inevitable, and so we thought, why not take the A Link to the Past Route, with our own changes? After the events of TwP and MM?
After Vaati had been defeated again, after Zant's crusade failed, and the worlds of Hyrule and the Twilight met.
Well, Awakening Hyrule will follow certain familiar aspects with the four latter games, but will be seeing something akin to A Link to the Past for a grand majority of the plot...but rest assured, there will be some unique surprises in store for Link and his allies. Welcome!

What were your plans for the current sages? My idea is that Saria could be a great source of wisdom to the the current generation given her experience during the events of Ocarina of Time. She could guide Link through his adventure and provide advice using her knowledge of what worked for the Hero of Time and what didn't. Like you say, she would be very old but, as the Kokiri never develop into adults, she wouldn't suffer the exterior effects of old age. This could be useful because the enemy may underestimate her based on her appearance (just as they underestimated the potential of Child Link in Ocarina of Time).

My current idea is that the Sages will be either closely related, descendant-wise of the past Sages, or completely different. For a brief spoiler, our long-lost friend Navi will be taking the role of the Forest Sage henceforth.
However I do like the idea for Saria!
